olive oil has always had a place at our tables in Jordan. with warm bread in the morning, alongside almost every meal, and in the excitement of tasting the first oil of a new harvest.
it's one of those familiar things we don't think twice about, until we're far from home and find ourselves missing it.
with zaytooni, we want to bring a little of that feeling to more tables, sharing olive oil from our land and the women who have cared for it for years.



different land, different oil
this harvest comes from Jerash and Al Karak, two places with their own landscapes and growing conditions. the greener northern hills of Jerash and the higher, drier land of Al Karak shape how olives grow and ripen.
altitude, weather, soil, olive variety and harvest timing can all influence an oil's aroma, fruitiness, bitterness and peppery finish. even its natural composition can change.
we love that each region and each season brings something a little different. that's the character we want to keep in the oil.
care from tree to tin
good olive oil starts with healthy trees, cared-for soil and the people who know the land.
we work with women farmers who have spent years caring for olive trees. we want to support thoughtful farming, including natural fertilisers where suitable and fewer unnecessary chemicals, so the land stays healthy for future harvests.
when the olives are ready, timing matters. picking earlier can bring greener aromas and a more pronounced bitterness or peppery finish, depending on the fruit. pressing soon after picking helps protect its freshness.
